How To Enjoy A Rainy Thursday

 I have the privilege of watching the Harris' kiddos every other Thursday! We normally go to the park with other friends, but today it was raining so we had to move to play B. Chuck E Cheese!!!!! Sorry there are no pictures of Presley she was sleeping during our little "photo shoot" haha :)

Must Try

Here is another pin that was a great success!!!

What you will need:

1. Ice Tray
2. Water
3. Fruit or mint(strawberries, blueberries, lemon, peaches etc.)
4. Splenda(optional)

How it works:

1. Fill your ice trays half way with water
2. Put your fruit of choice in the tray (if it isn't full just add some more water being sure it doesn't overflow)
3. Place in freezer until completely frozen

If you want to add a sprinkle of Splenda to each ice cube before freezing it will make your water more like a lemonade!!

Ingredients

  • 2 cups Muir Glen marinara (I chose the tomato basil)
  • 1 (9 ounce) package frozen ravioli, cheese or meat, your choice
  • 1 (15 ounce) container ricotta cheese
  • 1  egg
  • 1/2 cup freshly grated Parmesan cheese, divided
  • 1 pinch coarse salt and freshly ground pepper
  • 1 (9 ounce) package Green Giant frozen spinach, thawed according to package directions

Directions

  1. 1Pour the marinara and 1/3 cup water into a 10-inch skillet. Bring to a boil, then add the frozen ravioli. Cover and simmer on medium for 3 minutes.
  2. 2While that's going, combine the ricotta, egg and 1/2 the Parmesan cheese in a medium bowl. Add a pinch of salt and pepper.
  3. 3Arrange the thawed spinach on top of the ravioli. Then evenly spread the ricotta mixture on top of the spinach. Reduce the heat to low, cover and simmer 10 more minutes.
  4. 4Serve garnished with the rest of the Parmesan cheese.


Mothers Day 2013

My mom, grandma, and I have a mothers day tradition that we have been doing for the past few years; go to church and have lunch together(no boy allowed). But this year we decided to switch things up a bit. For my bday I received "West Side Story" tickets at the Jefferson Center and it happened to fall on mothers day. We still enjoyed a great lunch, spent the afternoon relaxing and then went to the show. It was such a great day and I love them both so much! Here are a few pictures from the afternoon. Enjoy!
